This is the best loaf of bread I have ever baked. My sourdough experience was a complete disaster which ended up with me leaving my starter behind in Toronto (R.I.P)Since that debacle I began using a different recipe and my loaves kept coming out of the oven all deformed and weird.
The Silpat mat may have helped matters although, I've given up on baking fresh bread for the time being (because I'm lazy).
